Saumon en papillote
Saumon in French means salmon, and "en papillote" means "in parchment", so it means "wrapped in parchment".

Ingredients
- 2 200g each Salmon fillets about 2-3 cm thick
- 12 cherry tomatoes
- 10 cm Carrot
- 10 cm courgette
- 1 clove Galrlic
- lemon
- 3 sprig Dill
- 20 ml white wine 10 ml for each parcel
- 1 tsp olive oil
- Salt an d pepper
Instructions
- Preheat oven to 200C (with fan) / 220 C (traditional without fan).
- Prepare vegetables and salmon:Peel and cut carrot and courgette into thin strips of about 10 cm long. Cut the cherry tomatoes in half; Grate in the lemon zest, olive oil and season with salt and black pepper and mix. Set aside. Skin the salmon fillet. Wash and dry with kitchen paper and put aside.
- Fold parchment into a heart after folding. Open the parchment and put a layer of olive oil (or other edible oil) on the side of the ingredients.
- In the heart of the paper at least 3 cm from the edge, first place a layer of carrot and courgette strips for the base, and then put the salmon on top. Place half the amount of small tomatoes on both sides of the salmon. Sprinkle salt and black pepper on the salmon. Then, put two lemon slices and 4 pieces of thin garlic on top. Put the dill on top. And finally splash with 10 ml of white wine. Use the same method to do another piece of salmon.
- Create package:Fold the other side, and then align the edges of the two layers of paper. Fold over the edges, taking care to seal all along the edge and at the ends. Finally, any excess at the ends will be folded. You can also use a small paper clip to make sure it is sealed at the ends.
- Put the "Paper bag" on the baking tray and put in the oven and bake for 12 to 15 minutes. If your salmon and my size are different, cooking time may need to be adjusted. When it is ready the "paper bag" will inflate like a balloon.
- From the top of the salmon, remove the the dill, lemon and garlic slices. Add the right amount of fresh dill, and a squeeze of fresh lemon juice on the top of the dish.Enjoy the sauce which is like a fish soup.
